This makes a monster batch! These are the cookies we make when going "up north" to a cabin.
They are great frozen and everyone loves them!
2 cups brown sugar
2 cups white sugar
1 cup butter
9 cups of oats
1 lb M&M's (nibble as much as you want on these)
1 1/2 cups creamy peanut butter
6 eggs
4 tsp vanilla
4 tsp baking soda
1 pkg chocolate chips (you can do more if you'd like)
Beat together the sugars, peanut butter and butter until well mixed. Beat in the eggs until well blended. Stir in oats, vanilla and soda. Stir in chocolate chips, then M&M's. Drop by tablespoons full onto a greased cookie sheet. Bake at 350 degrees for 12-16 minutes. (I bake them for 16 minutes) Do not overbake. (duh!)

How can you make (and eat?) all these DELICIOUS treats with diabetes? Do you know something I don't know? I haven't had sugar for about 7 months, but now that I am pregnant I have really been craving the stuff.(I never craved it after giving it up) But with having gestational diabetes the last time, I know now is not the time to slip up! PRAY FOR ME, PLEASE!

First of all, Congratulations!!
Second: I don't have these sweets all the time. The ice cream dessert was from Katherine's birthday, the actual day (not the party) and the cookies were made for our trip (frozen and taken) I also gave over a dozen to a friend.
Diabetes is not what it used to be, now we count carbs, not sugar. So, for example, for the ice cream pie, we had it for dessert at supper time, I did not have supper, I just ate the dessert. That was my pick for carbs that night. I will pray you do not get diabetes this time, if you do, the dietician will help you with carb counting and that should help. It is the carbohydrates in food that make our blood sugars rise, not the sugar. (although, sugar is carbohydrates) Does that make sense?
Oooh, these cookies are my favorite. I shouldn't have looked on here, because guess what I want now!?
Caught you - eating dessert in stead of supper! shame-shame! just kidding. Bad carbs certainly are my weakness, especially that one week a month. We're a splenda family, which helps out tremendously.
